Ingredients
  •  Whole Chicken – 1Kg
  •  1 tsp Dried/Fresh Thyme 
  •  1 Onion, cut in quarters
  •  1 tsp Black Pepper, freshly ground
  •  1 tbsp White Vinegar
  •  1 tbsp Sugar
  •  1 tbsp Dark Soya Sauce 
  •  3 Star Anise (Chakra Phool)
  •  1 Black Cardamom (Moti Elaichi)
  •  6-8 cloves of Garlic
  •  1 tbsp Butter 
  •  Salt to taste
Preparations
  • In a small bowl, rub the chicken with salt, pepper and thyme (keep aside)
  • Take a medium size pan with lid (which can fit the whole chicken), heat it on an induction cooktop.
  • Add butter to the pan and let it melt.
  • Place the chicken in the pan, breast side down.
  • Cook for 5-6 minutes with an open lid, until the chicken is light brown.
  • Turn the chicken and cook the other side, until light brown.
  • Add vinegar, soya sauce, garlic, onion, star anise, black cardamom and sugar with 4-5 cups of water. The chicken should be just about covered in water.
  • Close the lid and let it cook until on high temperature till the water starts to boil
  • Reduce the heat to a minimum and cook the chicken until tender and well done
  • Remove the chicken and set aside for 5-6 minutes.
  • Strain the broth and season it with fresh coriander, grated radish (optional) and spring onions.
  • Shred the chicken and serve hot on a bed of perfectly steamed rice made in the Usha Rice Cooker and broth with soya and garlic sauce.
Cooking Tip

While cooking ensure that the chicken is completely immersed in water.
